Meredith recovered from some early punishment to claim 3 for 32 and Tom Rogers produced a fine final over, conceding just three and getting rid of Hilton Cartwright and Clint Hinchcliffe, as Stars finished on 156 for 9.
The victory lifts the Hurricanes into third in the table ahead of the Christmas Day break, with Stars down to seventh as part of the bottom two including city rivals Melbourne Renegades.
